Bakery Hug

New refrigerated and frozen storage areas were created for the Hug AG bakery in Lucerne as part of an extension and several renovations. The aim was to functionally expand the existing production areas and optimize them to meet operational requirements.
A total of around 1,000 m² of cold room panels with thicknesses of 100 and 200 mm were used on a built-up area of around 400 m². A 16 m² blast chiller including air ducting rails and two D16 type freezer room revolving doors, a 25 m² defrosting cell adjacent to the blast chiller, and a 78 m² dough proofing cell with automatic BS sliding door were installed. In addition, various adaptation work was carried out in the interior and exterior areas.
Particular attention was paid to the clean integration of the technical components. Ventilation installations, inspection openings in the sandwich prefabricated construction, and precisely executed cable bushings enable easy maintenance and reliable operation of the systems.
The cold rooms and deep-freeze rooms that were implemented are characterized by a clear, functional design, robust surfaces, and a layout geared toward efficient production processes.
