Ensuring HACCP-compliant cold chains in food transport

Delivery services, catering companies, and hospitals with in-house meal supply are required to maintain food within defined temperature limits throughout the entire transport process. HACCP guidelines demand continuous temperature control, complete documentation, and verifiable processes.

Particularly critical: Cold meals in hospitals and care facilities must not exceed +7 °C. Between central preparation and distribution on wards, relevant time windows arise in which reliable passive cooling must ensure compliance with temperature limits.

The challenge

Why precise cooling is critical is

Breaks in the cold chain account for around 13% of global food waste each year in the food wholesale sector. At the level of wholesale and retail, as well as large-scale consumers – including gastronomy and canteens – avoidable food waste amounts to nearly 6 million tonnes annually, with a reduction potential of 70% to 90%.

Key risks on the last mile

The final stage of transport from warehouse or restaurant to the end customer places the highest demands on cold chain compliance. The following risk factors are particularly critical:

  • Icon zeitlich begrenzte Kühlung

    Time variability and ambient temperatures

High ambient temperatures and operational bottlenecks extend unloading times. Due to time pressure, different temperature ranges are often transported within the same unit.

  • Hand hält ein Zahnrad, welches ein Häkchen enthält

    Process complexity and limited monitoring

Changing transport modes and delivery methods make it challenging to keep cooling pack temperatures consistently low throughout the entire delivery process and to reliably meet regulatory requirements. Compared to centralized cold storage, options for active temperature control on the last mile are limited.

The solution

AIRFROSTER®: Two cooling chambers, precise temperature control, HACCP-compliant processes

The AIRFROSTER® is specifically designed to meet the requirements of HACCP-compliant food logistics. With its two independently controllable cooling chambers, cooling packs can be conditioned in parallel to different target temperatures – validated, reproducible, and with complete temperature documentation up to the point of pack removal. This enables operators to comply with required cold chain standards accurately and verifiably.

As a sustainable alternative to dry ice, the AIRFROSTER® reduces CO₂ emissions by around 90% while ensuring process-reliable cold chains.

Two independent cooling chambers

Parallel conditioning of cooling packs to different target temperatures – enabling the simultaneous transport of chilled and frozen food products within a single system.

Extreme Kälte

Precise temperature control

Adjustable target temperature range from −35 °C to +15 °C – covering requirements from the +7 °C limit for cold meals to deep-frozen products. Uniform pack temperature at removal minimizes temperature fluctuations during delivery.

HACCP-compliant documentation

Includes documented process qualification for the QM system – carried out as a real-world test using the customer’s own cooling packs prior to commissioning. Continuous monitoring, programmable control with time stamps, and complete documentation ensure full traceability in accordance with HACCP guidelines.

HACCP-compliant cold chains for safe food transport

Delivery services, catering companies, and in-house meal supply are subject to HACCP requirements for temperature control, documentation, and process reliability – while at the same time facing increasing pressure to design cooling processes in an energy-efficient and sustainable way. The AIRFROSTER® meets both requirements.

The AIRFROSTER® ensures process-reliable conditioning of cooling packs for HACCP-compliant passive cold chains in food transport.
